Potato Salad

The perfect accompaniment to a variety of dishes. Boiled potatoes can be enjoyed as part of a low-potassium diet up to once daily.

Ingredients (Serves 2)

  • 250g waxy potatoes, such as Charlotte, peeled (if preferred) and halved
  • 4 tsp natural yoghurt
  • 4 tsp mayonnaise
  • 1 lemon
  • 2 spring onions, finely sliced

Method

  1. Boil the potatoes in water for 15-20 minutes until just tender. Drain and rinse under cold water to cool, then drain again.
  2. Mix together the yoghurt and mayonnaise, then season with a good squeeze of lemon. Gently stir into the potatoes with the spring onion.
