The perfect accompaniment to a variety of dishes. Boiled potatoes can be enjoyed as part of a low-potassium diet up to once daily.
Ingredients (Serves 2)
- 250g waxy potatoes, such as Charlotte, peeled (if preferred) and halved
- 4 tsp natural yoghurt
- 4 tsp mayonnaise
- 1 lemon
- 2 spring onions, finely sliced
Method
- Boil the potatoes in water for 15-20 minutes until just tender. Drain and rinse under cold water to cool, then drain again.
- Mix together the yoghurt and mayonnaise, then season with a good squeeze of lemon. Gently stir into the potatoes with the spring onion.
