Meat marinades can be high in salt. Making your own marinade can reduce the salt and make it more suitable for people on a renal diet and for healthy eating in general. Here’s a simple recipe for a chicken marinade, suitable for those following a renal diet:
- 2 garlic cloves
- 3 rosemary sprigs
- 6 sage leaves finely shredded
- Zest and juice of ½ lemon
- 3 tsp of olive oil
- 6 chicken breasts
- Place each chicken breast between 2 sheets of cling film or baking parchment. Use a meat mallet or rolling pin to bash each piece of chicken.. Transfer to a dish.
- To make the marinade, crush the garlic using a pestle and mortar. Add the rosemary and sage, and give everything a good pounding. Stir through the lemon zest and juice, olive oil and some ground black pepper. Pour the marinade over the chicken, ensuring that it’s well coated. Cover and chill for at least 2 hrs.
- Heat the barbecue. Cook the chicken for a few minutes on each side until thoroughly cooked. Transfer to a board and leave to rest for a few minutes.
- Serve with some boiled potatoes or crusty bread and a small side salad
